S677 : Investigating the physicomechanical properties of gelatin-baxsed multi-laxyered edible film containing flaxseed oil, quince seed gum and zein particles

Abstarct: Due to a rise of food packaging waste and challenging problems such as environmental and health issues, production of environmentally friendly and biodegradable packaging made by biopolymers plays a crucial role to address problems. Biopolymers have their own strengths and weaknesses. Combining different biopolymers is one of the ways to improve and modify structure of them to have a proper packaging. Gelatin as an abundant protein, has good mechanical properties, but it does not have good barrier properties to water vapor. Using plant oil not only can enhance the nutritional value of gelatin packaging, but also as hydrophobic compound may remedy the water vapor barrier in gelatin. Pickering emulsion, as an emerging trend in food industry, is one of the best ways to increase efficiency of composite films. In this study, after preparing Pickering emulsion of flaxseed oil (20%, 30% and 50%) made by quince seed gum and zein particles as a wall dispersion, because of the highest stability of 20% emulsion, it was chosen to add to gelatin. There were three types of film, mono-laxyer gelatin film (control film), three-laxyer film (20% emulsion was added in the middle of the gelatin) and composite film (mixing of gelatin and emulsion). Three-laxyer films have little color difference with control films, and excellent water vapor and ultraviolet barrier properties than control films, while composite films have good resistance to water and the highest elongation at break among all types of film. It can be shown that adding Pickering emulsion of flaxseed oil to gelatin in the form of three-laxyer films can be one of the best ways to improve the quality of gelatin packaging.
